Instructions
- In a small bowl, combine chili sauce, brown sugar, lime juice, and ginger; blend well.
- Place one-quarter of the yams and pepper strips in the center of each of four 18" x 12" pieces of foil.
- Top each pile with one chicken drumstick and one chicken thigh.
- Spoon the chili sauce mixture over each packet and wrap securely using double-fold seals.
- Place packets seam-side down on a hot grill (gas on medium-high or charcoal 4–6" from medium-high coals).
- Cook 40–50 minutes or until the yams are fork-tender and the chicken is cooked through, turning the packets once during cooking.
- Open packets carefully, as hot steam will escape.
- Optional: About 15 minutes before the end of cooking time, brush the chili sauce mixture onto whole roasted chicken or baked chicken parts.
