We use Brawley Prime brisket out of California. These dudes are super marbled and have more flavor in one bite than your drip in high school.
Also known as Pork Candy. We cube up some pork belly, season them, smoke them, then toss them in butter and brown sugar and finish them off in Salt City BBQ OG sauce. These are widely considered to be the reason I am fat. I cannot stop eating them

We use Prairie Fresh St. Louis cut ribs seasoned with Salt City BBQ's homemade rub, smoked over white oak wood, and finished in brown sugar and butter. No sauce added, as good BBQ doesn't need sauce. Well, sauce does help, but that is just the cool thing to say these days.
