One of our most popular items. Our Half Chickens are cooked over Direct Heat in our Chud Box with Mesquite Coals. The finished product is a juicy, perfectly seasoned chicken with a Crispy Skin.

Pork and Beef blend available in 3 house made flavors: Regular, Jalapeño Cheddar, and Chile Piquin Cheddar.

Our Pork Belly is served two different ways. Burnt Ends or Crispy. Our Burnt Ends version is a simply seasoned pork belly that is smoked to perfection then glazed with our sweet sauce. Our crispy belly is a Skin On Belly that is smoked and finished over Direct Heat to produce a Crispy Chicharron Skin with Silk Belly meat underneath.

Praire Fresh All Natural Pork Ribs smoked low and slow, finished with a light, sweet house made glaze.
