In Natural Wine for the People, James Beard Award-winner Alice Feiring sets the record straight, offering a pithy, accessible guide filled with easy definitions, tips, and tricks for sourcing the best wines, whimsical illustrations, a definitive list to the must-know producers and bottlings.

A rich, fruit-driven Ethiopia honey with deep sweetness. Notes of plum, raisin, and mixed dried fruits lead the cup, layered with a smooth chocolate base. Demerara sugar adds a raw, caramelized sweetness that lingers through a full, syrupy finish. Process: Honey Region: Ethiopia
Think chocolate fudge meets a tropical fruit stand. Ripe mango and jammy black currant bring the brightness, while nutty sweetness and honey drizzle smooth it all out into a rich, candy-like cup. Process: Natural Region: Brazil
Concord grape hits hard right out of the gate—think grape soda intensity with a wine-like depth underneath. The cup finishes with rich dark chocolate, grounding all that purple sweetness. Juicy, bold, and very much Grape AF. Varietal: Castillo Process: Co-Ferment Region: Colombia
Columbia (Carbonic) : Watermelon, Berries, Red Wine, Floral
A little wild in the best way. It kicks off with a deep, “midnight” fruit intensity—ripe mango layered with blueberry and blackberry—then twists into a bright, kombucha-like zing that keeps everything lifted and lively. Tropical notes of mango and dragon fruit weave through the cup, while a touch of brown sugar brings just enough sweetness to keep it grounded. It all settles into a smooth dark chocolate finish, giving the cup structure and a clean, lingering close.
A refined and expressive washed Ethiopia. Juicy apricot and peach lead the cup, layered with delicate jasmine florals and a bright touch of lemon. A soft toffee sweetness rounds everything out, creating a cup that’s both vibrant and silky. Process: Washed Region: Ethiopia
Like cracking into peanut brittle with a citrus twist. Deep cocoa and caramelized sugar sweetness meet soft florals and a splash of juicy tangerine, bringing a little sparkle to a classic Brazil profile. Process: Pulped Natural Region: Brazil
Natural Pears, Apple Butter, Citrus, Floral, Milk Chocolate
A refreshing, sun-soaked cup that drinks like summer in full swing. Bright pink lemonade acidity hits first, lifted by delicate rose water florals. Cane sugar sweetness keeps it smooth and easy, while a soft milk chocolate finish adds just enough richness to round it out. Clean, vibrant, and endlessly crushable. Process: Natural Region: Ethiopia
Colombia, Chiroso, Washed Notes: Forest Fruits, Florals, Black Tea A washed Chiroso with more sweetness than the process usually gives you: forest fruits gelato, black tea, and florals. Grown by Jorge Rojas at Finca El Proceso. After each harvest day, the cherries came down to his La Roca plant in Planadas, where they were floated to remove defects, pulped, left to rest overnight, and washed the next morning. Fifteen days drying in marquesinas after that.
Ethiopia, Heirloom, Washed Notes: Purple Florals, Citrus, Baked Peach Every spring, fresh harvests start arriving from origin, and the first washed Ethiopian is always the one we look forward to most. Fluffy Petals is this year's: a lot we tasted and chose ourselves at Lalesa Washing Station in Gedeb. Purple florals, citrus, grilled peaches, subtle hops. It tastes like the season it arrived in.
Colombia- Anaerobic Washed Orange Blossom, Banana, Strawberry Sorbet

This is our take on a mocha. We made it a little fun with dark chocolate and some spice.
Who doesn't like strawberries and cream? Well if you don't than don't get this drink but it is everything it promises.
This latte is a riff on the famous cake we all hold dear to our hearts. It is full of espresso, sweet milks, and caramel finish.
The very first caramel recipe dates back over 1000 years. We have the French to thank for the addition of salt, and now we think we’ve landed a pretty great version of our own. Our recipe starts with the purest sea salt, sustainably harvested from Netarts Bay on the Oregon Coast. We then carefully toast the sugar and butter to a perfect golden brown, before stirring in the heavy cream. The result: a creamy, chewy caramel with bright, briny sparks of sea salt.
