Today’s review is one that makes its own gravy in a sense. At face value, this appears to be just another whiskey featuring a secondary maturation, which is quite obviously trending in the whiskey world these days. To that point, Grain & Barrel Spirits (who owns the Chicken Cock brand) mentions that this release was specifically created in response to a surge in consumer demand for whiskey featuring a secondary finish. While I feel that many of these releases can be a swing and a miss, I’m still interested in hearing the backstory on each one as well as trying them out for myself. Let’s dive into this release and see if the whiskey is as interesting as the press information behind it.

Mellow Corn is produced in accordance with a unique set of regulations that define Straight Corn Whiskey. The art of making fine bourbon first took place on the site of the Woodford Reserve Distillery, a National Historic Landmark, in 1812. This truly small-batch bourbon starts with traditionally grown corn, rye, and malted barley. All our staple grains are cultivated exclusively for us on the Omlin Family farm in Quincy, Washington. The grains are mashed and distilled in our Woodinville distillery, then trucked back over the Cascade Mountains for barreling and aging in our private barrel houses. Central Washington’s extreme temperature cycles promote the extraction of natural flavors from the oak barrel wood. Before we cooper the barrel wood, the wood is seasoned in open air, rain, wind, sun, and snow for 18 months to soften the wood’s harsh tannins. We deeply toast and heavily char our barrels to enrich the wood’s desirable flavors.

Baked orchard fruits with a touch of lime zest and kiwi. Mild pot still spices continue to build along with soft waves of vanilla, sweet coffee liqueur and cocoa powder. The texture initially round and full, gains additional wood spices with a delicate touch of clove oil and nutmeg adding a mild heat, giving balance to the sweetness.
