MIXED CULTURE SOUR (9.8%) - a golden sour brewed in the fall of 2023, then transferred into our outdoor coolship, where is cooled overnight in the open air while capturing ambient microflora. The following morning the inoculated beer was transferred into a selection of French oak barrels to spontaneously ferment. After 11 months of monitoring and tasting, we selected a few barrels to blend before refermenting on whole raspberries. Bottle conditioned with champagne yeast.

MIXED CULTURE SOUR (6.2%) - solera series of mixed culture golden sours fermented in our large oak foeder. A portion of our finished beer is drawn into a secondary vessel and replaced with unfermented wort, activating fermentation from existing microbes to produce a nearly identical copy of the original beer. In this version, beer was drawn into a fruiting vessel to age on 168lbs of guava for 3 months, before bottle conditioning with champagne yeast.

FOEDER CZECH DARK LAGER (4.8%) - brewed w/ bohemian malts & Hallertau Blanc hops, aged in our oak foeder

HARD SMOOTHIE (5.0%) - heavily dosed w/ all natural cara cara orange, tangerine, vanilla & coconut, gluten & dairy free

PILSNER (4.5%) - SEMOH brand, dry hopped w/ NZ hops, crisp & crushable w/ subtle hop notes

IPA (6.6%) - our flagship IPA brewed w/ mosaic, citra & simcoe, bright, citrusy, tropical hop flavor

HARD SMOOTHIE (5.0%) - heavily dosed w/ all natural strawberry & banana, gluten & dairy free

FRUITED SOUR (7.5%) - heavily fruited sour blended w/ coconut, key lime, pandan & vanilla soft serve - lactose free // contains dairy
