Established in 1896, the Akabu brewery was completely leveled by the Tohoku earthquake in 2011. It was rebuilt with the young toji Ryunosuke Furudate at the helm, and is now considered one of Iwate's finest kuras. ‘Gokujo no Kire’ means the best of the best cut. Cut is coming from its sharpness. In the cut, you will find fresh aromas of pinapple, pear and apple. This junmai daiginjo is made from Yuinoka rice polished down to 35%, and it is brewed slowly in the coldest months of January and February. Pressing is done at the temperature of -2 degrees, bottled right away and stored sub zero. 720ml Junmai Daiginjo
A new generation of sake from AKABU, inspired by the crystal-clear blue ocean shaped by nature. Enjoy its crisp, vibrant acidity and gentle effervescence. Imagine the blue sky and the endless sea as you sip casually and relax. Best enjoyed well-chilled. Limited release – once a year only! 720ml Junmai

In preparation for the 2020 Tokyo Olympics, Hakkaisan Brewery Company introduced “Awa” Clear Sparkling as an alternative for champagne. Meaning “bubbles” in Japanese, Awa is produced through a secondary fermentation taking place inside the bottle, similar to traditional champagne. After being disgorged, it is perfectly clear, with small bubbles and fine aromas. This sparkler drinks like Champagne, but is much less acidic. It is soft and gentle, with lots of melon, spice and rice flavors. Hakkaisan's most unique sake, perfect for that special occasion when you need something a little extra! Sparkling Junmai Ginjo 360ml
One word sums up this sake: special. This sake is just bursting with so many fresh fruit aromas and flavors. Notes of tropical fruits and flower blossoms abound in the nose. The sake drinks plump and juicy, and carries more ripe fruits like melon, lychee, and banana, with a strong herbal presence. As big and fruity as this sake is, the finish is where the magic happens - for such a big, complex sake, the finish is beautifully clean. Junmai Daiginjo 300ml
Brewed using yeast Kikumasamune's own developed yeast HA14, which brings out the fruity Ginjo characteristics without milling the rice to Ginjo standards, this is a delightful departure from your average junmai. From Japan's most prestigious brewery, this red rice ale is brewed with barley, red rice and sake yeast. The brewing process starts with the polishing, washing, soaking and steaming of rice (25% of total grain bill) to break down starches. Afterwards, pilsner malt is added to the mashing process. After lautering, Hallertauer hops are added in the brew kettle. Further complicating matters, two different yeasts (i.e., ale and sake yeast) must be used as regular beer yeast is not able to convert the rice sugars into alcohol. A fermentation time of two weeks is followed by a maturation period of four weeks. Hitachino Nest Red Rice Ale is filtered, but left unpasteurized. Ale 11.2oz bottle

Mochi Gummies began as a simple homemade snack that Mika Shino was making for her kids and friends. Weary of the various gummy snacks and candies her children were often asking for, Mika sought to create a snack that did not have excessive sugar, artificial flavors, chemical stabilizers, and animal products. The more she learned about how gelatin was the foundation of most chewy snacks, and the more she learned where gelatin came from (boiled animal skin), the more she was convinced that there had to be better options for treats. So she created a simple, pure, and natural snack - small bite-sized versions of the mochi desserts she grew up within Japan - and infused a diversity of natural flavors. Her kids loved it. Their friends loved it. And Mochi Gummies were born. Mochi Gummies are vegan, gluten-free, dairy-free, soy-free, nut-free, and gelatin-free. 2oz bag

Made from only rice, rice koji, salt, and water, Junmai (Pure Rice) Soy Sauce - Gluten Free is an ideal soy sauce alternative for those who are allergic to gluten or soy. Taisho-ya Shoyu, an esteemed soy sauce and miso specialty maker in Shimane Prefecture, over the span of 10 years and with great effort, developed this truly innovative sauce. In order to replicate soy sauce’s rich umami, slight sweetness, and intense aroma, they blend sake-kasu (sake lees) and shiro-nuka (premium rice bran) sourced from a local sake brewery, and add rice koji to promote fermentation. After aging in cedar barrels, the sauce develops a clean flavor and aroma along with a pleasing dark color. Junmai (Pure Rice) Soy Sauce - Gluten Free can be used as a finishing sauce and seasoning just like soy sauce. No additives are used to make this sauce. 150ml bottle Contains: Soy
Kanro Soy Sauce is a premium soy sauce that exhibits a pleasantly robust and mellow flavor, intense umami, and silky texture. These features are derived from its unique double-brewing method and long maturation period. Typical soy sauce is made with soybeans, wheat, water, koji, and salt, and is brewed only once. However, this sauce is brewed without salt, but instead with a special soy sauce which has been aged for two and a half years in cedar barrels. This mix is subsequently brewed as well, and then aged for another two and a half years. This means that it takes five years in total to complete the production of this supreme soy sauce. Igeta Shoyu, a century-old brewery in Shimane Prefecture, has produced this vintage soy sauce using its traditional methods since its establishment in 1912. Furthermore, all of their ingredients are sourced in Japan—of particular note is their local spring water which is considered one of the top 100 highest-quality water sources nationwide.
Crafted by a 330 year-old, esteemed soy sauce maker, this premium pure (unpasteurized) soy sauce exhibits a superb flavor and aroma, which are fresh, yet profound. The manufacturer employs a traditional production method, which has been passed down in the brewery for centuries, and only uses carefully selected soybeans, wheat, and salt. 10oz bottle Contains: Soy, Wheat

Made by a long-standing brewing company, Moribun, this Mentsuyu (Concentrated All-Purpose Noodle Soup Base) capitalizes on the umami from the company’s signature soy sauce and also from carefully selected ingredients, featuring bonito from Kagoshima, shiitake mushrooms from Ehime, kombu kelp from Hokkaido, and sardines from the Seto Inland Sea. When you use it as a dipping sauce for noodles, it’s best to dilute it one-to-one with water, but you can adjust its flavor intensity by changing this ratio to taste. 12oz bottle

This artisanal soy sauce is made with care in small batches following traditional techniques learned from mentors in Japan. Shoyu, or soy sauce, was developed over centuries in Asia by culturing a mixture of legumes and grains with koji spores. We start with growing and harvesting fresh whole soybean and wheat koji. The koji is then mixed with a brine of sea salt and water and slowly aged to develop complexity and depth of flavor before being pressed, pasteurized and bottled. A commitment from the brewery to make premium sake despite agricultural hardships like those of WWII. Until this sake came along in the 1960’s, all sake had distilled alcohol added to it due to rice shortages and war rationing. After the war, Chiyonosono crafted the first junmai sake (brewed without distilled alcohol nor additives of any kind) and celebrated by sharing it from a large, red lacquered sake cup called a Shuhai. The body is soft and expanisive with aromas of orange blossom. Straightforward, with a very subtle sweetness coddled in layers of subtle umami. Junmai 720ml

Matured for three years in Hakkaisan’s “Yukimuro,” a traditional, eco-friendly snow storage facility, this sake is fine yet complex. From the cold snow, temperature is naturally kept stable at 37ºF year round, without the use of electricity. This allows the sake to gently mellow undisturbed. Made from Yuki no Sei + Gohyaku Mangoku polished to just 45%, the sake is then aged in snow for a minimum of 3 years, which gives this brew a lush, round, velvety texture. Flavors of asian pear, baked goods, and hints of tropical fruit lead into a clean finish that only aged sakes can accomplish. Junmai Daiginjo Genshu 720ml
Many people mistake highly polished sake rice as a sign of quality, but Mr. Harada of Hatsumomiji Brewery wanted to show the importance of good skill – so he sought to make a great sake using low-polished rice. Harada himself was surprised with the final taste of Harada 80! He couldn't believe how fruity it was for using rice that was polished to 80%. Indeed, you get pineapple, lychee, muscat grapes, and a touch of effervescence, complemented by a bold, dry, and assertive finish. Junmai 720ml

Ishikawa’s 17th century Kutani Yaki porcelain artwork gracing this bottle helps tell the story that this sake has been made with local ingredients only. Discovered 100 years ago, the yeast known as kuratsuki kobo is especially unique as it exists naturally within the brewery itself, and is therefore only found in Nishide’s sakes. This Junmai Daiginjo exhibits notes of apricot and young banana that starts off soft and mild, giving way to the smooth umami of sake rice, finishing dry with balanced acidity. 720ml Junmai Daiginjo
Nishide has rescued two white-haired kitties which now live at the brewery. Named Moro and Mi, the cats are referred to collectively as Moromi, the term for sake mash. Moro is known for a calm and gentle demeanor, as well as unique facial features, including a sharp face line and eyes of different colors (yellow on the left and blue on the right). Mi, on the other hand, is known for being smart and responsible, with a round face and blue eyes. The cats have become quite popular at the brewery, with visitors stopping by to see them while enjoying some sake. This sake has a distinct aroma of banana, apricot, and herbs, and offers a sweet, umami-rich flavor with a sharp acidity. The taste evolves as the sake warms to room temperature. Junmai 720ml
At the 14th Omachi Summit in 2023, a highly acclaimed event featuring sake made from 121 breweries and 206 brands of "Omachi" rice from Okayama Prefecture, two sake varieties from Ohmine Shuzou "Ohmine 2-Grain Omachi" and "Ohmine 3-Grain Omachi," each received the Excellence Award. This marks the second consecutive year of receiving this prestigious award. In chilled temperatures, the moment this sake touches your mouth, there's a very gentle attack with the aroma of grape and lychee, and from the middle to the end, a juicy richness reminiscent of yellow peaches expands. When warmed, you can enjoy a soft fragrance reminiscent of Japanese raw sugar ('wasanbon') and its sweetness. The production is limited, so grab this special sake while you can! Junmai Daiginjo 720ml
Ohmineʼ s Winterʼ s Arrival Cloudy, introduces “assemblage” ‒ brewed with a blend of Omachi, Aiyama and Yamadanishiki. The recipe (allocation of each rice) changes year to year to achieve their ideal taste. In the tank of this sake, Ohmine adds the fermenting Yamadanishiki rice, which adds a touch of bubbliness. Silky lactic acid tastes of yogurt and burrata cheese are present, and the finish is sweet, like Wasanbon (fine-grained traditional Japanese sugar). Junmai Nigori 720ml
Ohmine produces this sake only once a year, so don't miss this one! The impression of the aroma is gentle, but there is a refreshing quality reminiscent of apples and grapefruits. It has a light, refreshing acidity with structure. There is a transparent sweet and sourness reminiscent of muscat and Chardonnay, and from the middle onwards, you can feel the fresh richness and bitterness of the fruit. Junmai Daiginjo 720ml
Seikyo Namazake is brewed with Omachi rice, characterized by a deeply rich and soft taste as well as a crisp finish. Omachi rice was discovered more than 150 years ago and is the oldest existing sake rice. Bright and lively, this sake shows notes of ripe watermelon, mango and licorice in the finish. It is well balanced with a rounded flavor and clean acidity. Junmai Ginjo Namazake 720ml

Yamahai Junmai Muroka Nama Genshu 720ml
From the famously daiginjo-only sake brewery comes a new line of sake, employing the recently revived rice “Soubei Wase” , which contributes to the unique flavor of this sake. It took over three years to revive this rice variety which was originally native to the Shonai Region; it is the parent of legendary heirloom rice strain “Kame no O”. This sake has a gentle and delicate floral aroma and a soft sweetness. Soubei Wase does not have the ‘flashiness’ of more recently developed sake rice; rather, it gives you a sense of refined rustic beauty. The charm and taste this historic sake rice provides will deepen and mature over time, and thus sake made from it are excellent for aging. Junmai Daiginjo 720ml
This Junmai Ginjo is made from Dewasansan rice, a descendant of the iconic Omachi heirloom strain. This rice is exclusively grown in Yamagata prefecture and helped to pave the way for Yamagata to receive the first geographical indication (GI), or appellation, in all of Japan. Grassy, floral aromas with green apple and melon. The finish is soft and smooth. Junmai Ginjo 720ml
Yuki no Bosha - which translates to cabin in the snow - is named after the cold and snowy region of Akita where the sake is brewed. The brewery gets so engulfed in snow during winter that the fermentation process gets cooled and slowed, resulting in a fermentation process that takes 5-10 times longer than production in other areas. The beautiful aromas in this sake come from a proprietary blend of twelve different yeast strains, some of them derived from fruits like apples and strawberries. The sake itself is filled with contrasting notes of juicy fruit and spicy, mineral complexity. Gentle hints of anise on the nose blend with tons of beautiful fruit on the palate, finishing with a touch of pepper. Junmai Ginjo 720ml bottle
Produced in Akita by the Saiya Brewery, makers of Yuki No Bosha, this is a favorite among locals of the region. Yuri is the name of the local area of Honjo-shi and Masamune is an old term for Japanese sake. This sake is mellow and rustic and has a firm structure, which makes it enjoyable at a range of temperatures, from chilled to warm. Futsuushu 720ml
