Dry Vermouth di Torino rediscovers the old tradition of Torino manufacturers macerating ingredients in alcohol and distilling part of the maceration to give longevity and elegance to the final product. The recipe dates back to the 1950s, when the heart of Turin's economy was beating because of the aromatized wine industry. Wormwood, muscat yarrow, sage, thistle, and hyssop are among the ingredients that contribute to an explosion of flowery and herbal notes with a hint of spices. The taste is dry, soft, and warm, persistent with notes of cinnamon, flowers, sage, and almonds. Enjoy it straight on the rocks with an orange zest or blended in a gin or vodka martini.
Dolin's red vermouth has a very long history, punctuated with many prizes and awards. It's unchanged recipe is one of our treasures. This vermouth has a lustrous coppery color, gentle aromas of fruit compote, of prunes and walnuts with grassy notes, tempered by spicy aromas like Szechwan pepper... then aromas of almond, citrus, pear and cinnamon with gingerbread, tobacco, oregano and hyssop notes. This very rich bouquet is tempered by a subtle bitter base wine. 30 to 40 spices and botanicals are used to make Dolin's famous red vermouth: coriander, hyssop, rhubarb and curacao are just some of those in a closely-guarded secret recipe. This French vermouth can be served as an aperitif on ice, a traditional before-dinner drink in France, but can also be a tasty ingredient in many cocktails, such as the famed Negroni or Manhattan.
Dolin dry vermouth is made from a unique blend of 15 botanicals and spices that macerate in a specific white wine, Ugni Blanc, like the other Dolin vermouths. Absinthe, brooklime, rose and orange bark are the best-known ones, but you can also taste verbena or yellow genepi. Slightly sweet, this dry vermouth is particularly appreciated by bartenders for its subtlety and elegance. You can of course also enjoy this Dolin dry vermouth as an aperitif, neat or on the rocks.
In 1832, the master carpenter Jos Antonio Sierra founded El Maestro Sierra. As one of the top coopers in the area, Jos Antonio made the barrels for all of the big Sherry houses. After years of making barrels for everyone else, he concluded that he could produce Sherries that were better than what the big Sherry houses were cranking out, so he opened up his own little winery. This little up-start Sherry producer was not welcomed into the world of nobility-owned Sherry houses, so the local gentry did everything they could to stop him. Fortunately, the quality of his sherry prevailed over their efforts, and Jos Antonio Sierra became one of the top Almacenistas (stockholders) of high-quality Sherry. Oloroso Sherry has incredibly complex aromas of hazelnuts and exotic spices. The label pokes fun at Jos Antonio's struggle by depicting an allegorical fox hunt with the nobles hunting El Maestro SierraÕs fox.
YELLOW is a genepi aperitif. It is a fortified and aromatized wine made with hybrid grapes from New York's finger lakes and genepi flowers grown in the French Alps. It is delicate and floral; serve over ice, in a spritz with club soda or sparkling wine, or in place of vermouth in a stirred cocktail.

The aromatic profile reveals enticing notes of dried fruits, seductive vanilla, and the warm, inviting essence of eggnog. Manzanilla is a style of Fino Sherry from the town of Sanlcar de Barrameda. The unique climate of this town enables a very special flor to grow year-round and create an especially delicate Sherry reminiscent of the ocean. Bodegas La Cigarrera is a Manzanilla producing Almacenista that began aging Sherries in 1758. In 1997 La Cigarrera's ninth-generation cellar master Ignacio Hidalgo decided to estate bottle his Sherries so that he could sell a higher quality wine directly to the market.
Albana grapes are carefully selected and are left to dry on racks for about two months. After drying, the grapes are fermented and refined in small oak barrels. The wine displays a thick, gold-yellow color that tends toward amber, with persistent aromas of dried fruits, nuts, figs, and apricots. On the palate, it is rich and full-bodied, leaving a slightly bitter aftertaste. This wine pairs well with fancy cakes, biscuits, and traditional Romagna ciambella. For the best experience, serve chilled.
A uniquely Japanese interpretation of a classic sweet red vermouth crafted by the Tsutsumi Distillery in the Kumamoto Prefecture in Kyushu, Japan. It is made from a Junmai sake base and fortified with 100% rice-based shochu, before being infused with botanicals such as yomogi (Japanese mugwort), yuzu, kabosu (a high acid citrus fruit), sansho peppercorn, and ume (Japanese green plum), and then sweetened with Okinawan cane sugar. The result is a profile richer and more robust than the drier, flagship Bermutto with aromas of stewed cherry, orange peel, brown sugar, and wood spice. The palate is bright and acidic with the kabosu and yomogi notably dialed up, lending notes of black tea, tart cherry, and citrus zest; the ume is prominent throughout, providing subtle marzipan and oxidized fruit notes similar to umeshu (Japanese plum liqueur).
Made from wines of the Quinta de Born Retiro, this is a blend with an average age of 20 years, an adult and sophisticated tawny. Aromas of apricot, almond, walnuts and cocoa with hints of toasted caramel and spices such as cinnamon. Delicious as an aperitif or following an evening meal. It can also accompany chocolate, cheeses, and cream-based desserts or desserts that are not overly sweet. It goes very well with dry fruit and nuts, nut cakes, and Swiss rolls.
With its source the great Macharnudo vineyard, Valdespino's Inocente is arguably Jerez's most iconic Fino. The wine's intensity defies description. While other Finos are fermented in tank, Inocente is like the great Finos of the past fermented in barrel with indigenous yeast. It then passes through its solera's ten stages or criaderas (as opposed to the 2-3 criaderas employed for most other finos). The wine at bottling has an average age around 10 years doubling or tripling the aging of most other Finos. As American Sherry authority Peter Liem has written, Inocente is a fino of exceptional complexity, depth and distinction, and it is no exaggeration to say that it is one of the sherry region's greatest wines.

Milling: 70% Founded in 1920 by Hayashi Eiichi, the multi-award winning Hayashi Honten prides itself on 'remembering the old while embracing the new'. Nihon No Kokoro is made from dai-ginjyo sake lees resulting from production of Kitaya Kansansui junmai dai-ginjyo sake. It is tank aged for 5 years. Delicately aromatic, soft on the palate, mosaic of fruit nuances, exceedingly smooth and mellow finish.
Built next to the samurai-era Taketinjin castle, this classic tokubetsu honjozo sees a little bit of distilled sake blended in before filtration which amplifies and elongates all of the nuanced sake flavors. Due to the consistent sunshine in this region of Japan, the brewery operates 100% on solar panels. Cucumber, green tea, melon, and pear drive the aromas and combine with a subtly sweet palate highlighted by subdued acidity alongside a robust finish. It is made from a Junmai sake base and fortified with 100% rice-based shochu, before being infused with botanicals such as yomogi (Japanese mugwort), yuzu, kabosu (a high acid citrus fruit), sansho peppercorn, and ume (Japanese green plum), and then sweetened with Okinawan cane sugar. The result is a profile richer and more robust than the drier, flagship Bermutto with aromas of stewed cherry, orange peel, brown sugar, and wood spice. The palate is bright and acidic with the kabosu and yomogi notably dialed up, lending notes of black tea, tart cherry, and citrus zest; the ume is prominent throughout, providing subtle marzipan and oxidized fruit notes similar to umeshu (Japanese plum liqueur).
This unaged Rhum Agricole is crafted on the island of Marie Galante using time-honored methods first developed by Père Labat in the early 17th century. Its depth and character come from exceptional, minimally treated sugar cane—harvested by hand at peak ripeness and distilled in a small 12-plate copper column still.
Named for the Sibillini Mountains where the herbs, plants and honey utilized in this amaro hail. They are hand ground with a mortar and pestle and then logs are used in the decoction of the ingredients. Only 5000 bottles per year are produced. Sip and savor.
These are the first Carricante vines planted in the US and overseen by the powerhouse Rhys Vineyards from the Santa Cruz Mountains AVA. This is a single vineyard bottling of Carricante grown on ancient volcanic soils that emulate those from Mt Etna in Sicily. They have made a truly spectacular wine that could easily be confused with a Premier Cru Burgundy with its layers of complexity and elongated finish that is wonderful currently but has great potential to age.

The parcel was previously planted to Pinot Noir (in Epineuil) but David and Arnaud found it better suited to Chardonnay due to a Kimmeridgian bedrock. Aged 20% in older barrels that are 1 to 5 years old and 80% in tank.
The Pra winery, although only started in the early 1980s, has come to be not only one of the top producers in the Soave appellation, but also comes from one of the most important and visionary white wine makers in all of Italy- Graziano Pra. Another volcanic-soiled wine with an average vine age of 30 to 40 years, Staforte is made from a selection of the best Garganega grapes from vineyards in the Monteforte d'Alpone zone and is of such great quality that it can easily cellar for up to 5-10 years. The rollercoaster of aromas and flavors include ripe apples, candied orange peel, crushed rocks, milled white pepper, and mint leaf. This is ideal with nutty cheeses and roasted white fish.
