500mL Bottle - Working with our friends at Intelligentsia, we flew down to Guatemala to source some of the world's best coffee to use as we release the first-ever Coffee Barleywine. The beer is an English-style Barleywine, meaning malt forward, and aged in 4+ year old Heaven Hill Bourbon barrels before adding La Soledad coffee beans right before packaging to retain a bold coffee aroma and flavor.
500mL Bottle - The same recipe as BCBS, but aged in 12-year old “Elijah Craig Barrel Proof” bourbon barrels. This bourbon was awarded 2017 “Whisky of the Year” by Whisky Advocate, the top honor in the world of international whiskey. Reserve is intended to showcase the nuances of a premium single source, and highly sought after bourbon.

500mL Bottle - Created in partnership with our next door neighbors, Intelligentsia Coffee, Café de Olla is inspired by the traditional Mexican beverage of the same name. We added coffee beans and cold coffee to Original Bourbon County Stout and then enhanced this beer further through additions of cassia bark, orange peel, and panela sugar. The resulting beer is layered in complexity. Coffee and orange permeate the nose and are followed by notes of cinnamon, chocolate, and a pleasant sweetness.
500mL Bottle - “Mon Chéri” means “my darling” in French and this recipe is a love letter from our brewer, Quinn, to his wife who loves cherries. Mon Chéri Stout is made with Balenton and Montmorency cherries, brewed with oats and a dash of brown sugar creating aromas of amaretto and almond. With one sip you’ll instantly get flavors of cherry cobbler, vanilla, and chocolate, followed by a silky, velvety finish.

The result is a softer flavor profile, full of caramel, vanilla, butterscotch, and toffee flavors, all while carrying the nuances of Larceny bourbon barrels.
500mL Bottle - Our Reserve Bourbon County Stout releases showcase how a premium single source bourbon barrel can influence the nuances and flavors of our original BCS.The 2019 Reserve Rye is aged in 100% Rittenhouse Rye barrels - lovingly referred to as "the bartender's favorite" rye. Rittenhouse's Barrels had a unique effect on the original imperial stout, imparting flavors of fruit and spice. Reserve Rye accentuates all that makes Rittenhouse and Bourbon County unique.
500mL Bottle - 14.6% Wheatwine - Caramella or ‘candy’ in Italian is a wheatwine aged in Larceny Wheated Bourbon barrels with apple, cinnamon, and natural caramel flavor added after aging. Just like last year, the sweet smoothness from the Larceny Wheated Bourbon barrels adds a lingering warmth that complements the added flavor nuance. It’s nostalgia-inducing flavors are reminiscent of a caramel apple. Our Lab Tech, Joey Tidei, created this variant as a tribute to his love of seasonal flavors. This luscious embodiment of caramel perfectly paired with a slightly-tart apple flavor will transport you to a crisp autumn day.
500mL Bottle - 14.1% Imperial Stout - We’re excited to debut our first-ever tea-inspired variant. Brewer Paul Cade brought this idea to life, inspired by his girlfriend, Martha, who prefers tea over coffee. Our Bourbon County Kentucky Fog Stout is a take on the London Fog tea drink. With that flavor profile in mind, we added Earl Grey Tea and Black Tea from Kilogram Tea, as well as clover honey from The Honey House, to make a Bourbon County Stout variant with a complexity like none before. Trust us, you’ll just have to try it.
500mL Bottle - 13.3% Imperial Stout - Bourbon County Special #4 Stout is an oatmeal stout variant of our original Bourbon County Stout recipe, also aged in bourbon barrels, that uses crystal oats to add a nutty character and a smooth mouthfeel. After barrel aging, we added Intelligentsia Coffee, both their cold coffee and single origin coffee beans from Ethiopia, called “Metad Buku,” to bring out a pleasant fruity coffee character. Lastly bourbon barrel-aged maple syrup from Bissell Maple Farm in Ohio is added which provides complexity to the nutty oats and coffee to round out the flavors, ultimately reminiscent of your breakfast ‘special’ at the local diner.

Our primary focus every year is to make this beer the best that it’s ever been, with the best ingredients, which includes the finest of bourbon whiskey barrels. This year’s Bourbon County Stout is aged in a mix of bourbon barrels from a variety of whiskey distilleries. Barrel-aged for a year to develop the complexity that only time can provide, Bourbon County Stout boasts a unique blend of flavors such as fudge, vanilla and caramel — topped off with a rich, complex mouthfeel.
14.2% Imperial Stout - This year’s Proprietor's Bourbon County Stout was inspired by third-generation Italian American brewer Emily Kosmal’s love of spumoni, a classic Italian frozen treat. Spumoni is a tri-colored frozen dessert that contains candied fruit and nuts between each layer, historically including flavors such as pistachio, cherry and chocolate. Blended with fresh pistachios, cacao nibs, candied Amarena cherries, and natural vanilla flavors, the 2020 Proprietor’s Bourbon County Stout is incredibly complex and layered with cocoa, nut, and dark fruit notes with hints of vanilla and oak. Emily, who also created the concept for 2016 Proprietor’s, is our first brewer to have two Proprietor’s concepts picked for release.
500ml Bottle - 14.1% - Imperial Stout - Pushing the boundaries of barrel-aged stouts is in our DNA, and with that, we brought to life our first-ever cola-inspired variant. Brewers Paul Cade and Jason Krasowski bonded over their love for a classic cola while creating the Classic Cola Stout. Combining the refreshing nature of classic cola and picking up the flavor profile from a whisky cola, we added lime and orange juice and zest, plus coriander, cassia bark, nutmeg, brown sugar, and vanilla to bring out the complex characters of the classic drink. This is the ultimate twist on a whiskey cola and a must-try for Bourbon County Stout, cola or whiskey/cola lovers.
16% - Imperial Stout - Our Double Barrel Toasted Barrel Stout was aged for one year in Elijah Craig’s Small Batch Bourbon Barrels, then another year in Elijah Craig Toasted Bourbon Barrels. These toasted barrels are built to the same specifications as normal bourbon barrels but are more heavily toasted and very lightly charred. Not only does this stout embody distinctive elements from Elijah Craig’s award-winning Small Batch Bourbon Barrels—like warm spice & vanilla—it also deepened in intensity during its second year of aging. The result? A Bourbon County Stout unlike any before. In addition to the familiar chocolate, caramel, and vanilla comes flavors of toasted marshmallow and a very pronounced fruit and oak finish. This is only the second time we have packaged a “Double Barrel” Bourbon County Stout —and trust us, you’ll want to get your hands on this special limited-edition gem.
500ml Bottle - 13.2% - Imperial Stout - For the first time ever, we’re digging into the Proprietor’s (Chicago-only release) vault and bringing back a fan favorite with Bourbon County Fourteen Stout. But this time, it’s with a twist. We’re paying homage to the popular Proprietor’s 2014 recipe, but upping the rye ante by adding rye to the mash bill. Layering cassia bark, cocoa nibs, panela sugar, and coconut water, this stout has an intricate, sweet and spicy flavor profile that will have fans going back sip after sip.
500ml Bottle - 15.4% - Imperial Stout - We partnered with our friends at Blanton’s and aged our Imperial Stout for 18 months in barrels from one of the world’s most sought-after bourbons, Blanton's Original Single Barrel Bourbon. Taken from the center-cut or middle sections of the famous Warehouse H, Blanton’s Original Single Barrel was once only available for ambassadors, dignitaries, and friends of the Blanton family, but now is available for everyone to enjoy. Just as we set the standard for barrel-aged stouts, Blanton’s set the standard for single barrel bourbons. Through our partnership, we created a truly unique reserve filled with rich dark chocolate and oak notes, finished with warm aromatics of baking spices such as clove, nutmeg, and cinnamon.
500ml Bottle - 14% - Imperial Stout - Our goal each and every year is to uphold the integrity of Greg Hall's recipe and make the best Bourbon County Stout Possible, and this year is no exception. Our rich Imperial Stout is blended from a mix of bourbon barrels from distilleries such as Heaven Hill, Wild Turkey, and Buffalo Trace, each aged in freshly emptied bourbon barrels for 8-14 months. Expect flavors of chocolate and vanilla, oak, whiskey, and molasses, followed by caramel, berry fruit, and almond.
500ml Bottle - 12.8% - Imperial Stout - For the second year in a row, Proprietor’s Bourbon County Stout is inspired by a classic frozen treat and brewed again by the mastermind, Emily Kosmal. A flavor house specialist, Emily has the knowledge and skill to bring her dessert treats to life. Proprietor’s Bourbon County Stout is aged in bourbon barrels and blended with luscious strawberries, vanilla, and coconut, reminiscent of a classic strawberry ice cream bar. These elements come together to create the indelible flavors of decadent shortcake, layered with vanilla and topped off with the slight fruitiness of strawberries, similar to the ice cream bar’s strawberry core. Emily, who also created the concept for 2016 Proprietor’s and 2020 Proprietor’s, is our first brewer to have three Proprietor’s concepts picked for release.
500ml Bottle - 14.3% - Imperial Stout - Inspired by the Italian desserts of her childhood, Jill Cerone, People Manager at Goose Island, dreamed up this variant after grabbing a box of chocolate-dipped biscotti from her cabinet. Working with the brewing team, Jill brought the flavor to life with notes of anise, marzipan, cocoa, and buttered toffee. One sip and you’ll be reminded of pizzelle cookies, Easter Pane di Pasqua and, of course, almond biscotti.
500ml Bottle - 13.2% - Imperial Stout - The specific Burundian coffee blend combined with our Imperial Stout is called Turihamwe, which means “together”, and is a perfect tribute to all the hands that go into making it – from the female coffee farmers in Burundi that produced the blend, to our friends at Intelligentsia. The result of this “togetherness” is another exceptional coffee variant featuring rich chocolate, coffee, and caramel flavors that will appeal to coffee drinkers and beer lovers alike.
500ml Bottle - 14.3% - Imperial Stout - This year, our Imperial Stout is aged and blended from freshly emptied bourbon barrels from Heaven Hill, Four Roses, Wild Turkey, and Buffalo Trace distilleries. Expect flavors of vanilla, dark chocolate, toffee, molasses, almond, and dried fruit.
500ml bottle - 13.4% - Imperial Stout - This recipe was dreamed up after two of our brewers, spent a night out on the town trying some of the best cocktails the city has to offer. The result is a brewer’s take on a jungle bird cocktail that combines banana, coconut, lime, and pineapple. Proprietor’s Stout will bring Chicagoans down to the tropics this Bourbon County Stout season, a welcome escape from the Chicago cold.

Our Reserve Two-Year Barleywine evokes the rich intricacies from that of Old Fitzgerald’s Bottled-In-Bond Series for a velvety taste of rich malt, entwined with notes of toffee, cherry, vanilla, fig, and almond.
500ml Bottle - 14.4% - Imperial Stout - Going back to the inception of Bourbon County Stout, the 30th Anniversary Stout is aged from a blend of Jim Beam barrels from their Small Batch Bourbon Collection barrels including Basil Hayden, Booker’s, Baker’s and Knob Creek. Expect notes of dark chocolate, vanilla, cherry, and almond. We’re excited to raise a glass to this extraordinary 30-year-old history and craftsmanship.
500ml - 13.9% - Imperial Stout - Members of the Goose Island E-commerce team, Melissa Alleguez and Ryan Hubona crafted a recipe inspired by Melissa’s childhood memories of stealing fig cookies out of her grandma’s cookie jar during her summers on Lake Michigan. Our brewers used Black Mission figs (10,000 pounds of them, to be specific) to create this variant resulting in characteristics of dried fruit, honey, molasses, and citrus, all reminiscent of the classic fig cookie sold on shelves today.
500ml Bottle - 15.5% - Introducing the newest addition to the Bourbon County family: our first ever “Cask Finish” stout. Inspired by the artistry of our friends at Angel’s Envy, we embarked on a journey to further develop the complexity of our barrel-aged stout by introducing never before used “finishing barrels.” The beer starts in freshly emptied barrels that once held Angel’s Envy Kentucky straight bourbon. After aging in those for a year, the beer was transferred to a second set of Ruby Port wine barrels where it patiently matured for another year. This finishing process refined and amplified the flavors of cherry, spice and cocoa within our aged stout. Bourbon County Brand 2-Year Cask Finish Stout is a testament to our legacy as the originators of bourbon barrel-aged stout.
500ml Bottle - 12.9% - Feeling nostalgic this year, we dug back into our Bourbon County vault and pulled out an iconic recipe. Back in 2013, we released our “Backyard Rye” and our brewer Mike Siegel found himself hand picking mulberries off trees just steps away from our Goose Island Barrelhouse here in Chicago. This year, inspired by that initial release and by his own childhood memories of picking fruit in his own backyard, Mike was enthusiastic to get to work on this year’s 2023 Bourbon County Brand Backyard Stout. This barrel-aged stout is first aged in bourbon barrels for at least one year and then finished and blended with mulberries, boysenberries and marionberries. Each addition of berry contributes its own distinct flavor profile, with some adding sweetness and others providing acidity and complexity. A taste of the past, this imperial stout is a balanced and nuanced play on fresh fruit, vanilla, and chocolate.

In the heart of Chicago winter, we were inspired by the warming flavors of a classic dessert: rice pudding. Never having used rice as an ingredient in a stout before, our brewers were excited for the opportunity to brew these flavors into a beer worthy of the city of Chicago. Using a combination of cassia bark, brown sugar, raisins and toasted rice, the final recipe is a taste of home cooking. This stout wraps you in a culinary blanket of toasted rice, vanilla custard, dried fruit, and baking spices. Proprietor’s is our love language, Chicago.

Chicago and the people who call it home are forever a source of inspiration in all that we do. 2024 Bourbon County Brand Proprietor’s Barleywine is a direct reflection of that inspiration and unlike anything we've ever done before. With a subtle dried fruit sweetness, refreshing lime zest and a delightfully warming finish, this barleywine is decidedly Chicago.
500ml - 16.0% - As the creators of the first-ever bourbon barrel-aged stout, we have long sought to push the boundaries of what is possible in the world of beer. That’s why, when crafting this year’s 2024 Bourbon County Brand Cask Finish Stout, we were thrilled to work with our friends at Bardstown Bourbon Company. Drawing inspiration from Bardstown’s modern and creative spirit in finished whiskeys, this imperial stout takes the same journey as their Origin Series Rye. We began by aging our imperial stout in Bardstown’s freshly emptied straight rye whiskey barrels. From there, we transferred the beer to “hybrid” oak and cherry wood barrels that finished their rye whiskey. These incredibly expressive barrels deliver a remarkable finish unlike anything seen before in the Bourbon County family. A beautifully balanced beer, Bourbon County Bardstown Cask Finish Stout is deeply expressive with vibrant cherry, toasted oak and a lingering herbal finish.

Inspired by late nights in the kitchen with Mom, Goose Island employee Paul Spiller sought to capture that sweet moment in this year’s newest member of the Bourbon County Brand Stout family. 2024 Bourbon County Brand Macaroon Stout is an imperial stout aged for a full year in bourbon barrels before adding rich cocoa nibs, sweet candied ginger and toasted coconut. This decadent stout is an homage to the flavors of homemade coconut macaroons with a twist of nostalgia.

Barrel-aged for an average of 12 months, Bourbon County Original Stout boasts deeply developed flavors of fudge, vanilla and caramelized sugar with a rich, decadent mouthfeel.

Today, we're excited to warmly welcome the return of this iconic member of the Bourbon County Brand Stout family. Vanilla, as an ingredient, has made an appearance in Bourbon County lineups over the years, but the 2024 Bourbon County Brand Vanilla Rye Stout is a new take on our 2014 Vanilla Rye release. This year’s release showcases rye and the complexity it delivers by starting with a rye imperial stout and aging it in freshly emptied rye whiskey barrels. After aging in barrels for a full year, the stout is then finished with incredibly aromatic madagascar vanilla beans. Bourbon County Vanilla Rye Stout has the beloved attributes of the vanilla variants before it–with a new characteristically rich spice character from aging in the rye whiskey barrels.
500ml - 14.5% - The beer began its aging journey in freshly emptied bourbon barrels, which impart rich layers of oak, warm vanilla, and subtle baking spice. It was then finished in cognac barrels, adding elegant notes of dried fruit and contributing to a rich, full mouthfeel. Following the aging process, the stout was blended with Montmorency cherries, citrus, and panela–resulting in a velvety, decadent beer with flavors of candied dark cherry, soft vanilla, and a caramelized citrus finish.
500ml - 14.6% - First aged in freshly emptied bourbon barrels, this stout draws inspiration from the underlying decadence of chocolate, caramel, and roasted nuts found in Original. Layered with a blend of cocoa nibs, hazelnuts, almonds, cashews, and dates, this full-bodied stout showcases the classic flavors of a chocolate praline while embracing the subtle nuances imparted by the bourbon barrel.
500ml - 17.4% - 2025 Bourbon County Brand Double Barrel Stout is a masterclass in barrel aging. In collaboration with Heaven Hill Distillery, Goose Island aged this release in not one, but two sets of freshly emptied Heaven Hill Bottled-in-Bond Bourbon barrels. By centering the nuanced complexity of the whiskey, the resulting beer is a true celebration of bourbon, collaboration, and the most essential element of every Bourbon County release: the barrel itself.

500ml - 15.2% - 2025 Bourbon County Brand Reserve Stout is a testament to the depth that comes from extended aging in an exceptional single lot of barrels. For this special release, we rested our imperial stout for a full two years in casks from one of the most respected names in American whiskey: Parker’s Heritage Collection. This longer aging period goes beyond the brewery’s traditional process, drawing out concentrated layers of cocoa, dried fruit, spice, and toasted oak. The result is a rich, contemplative expression of Bourbon County—one that rewards patience and reflects a legacy built slowly, barrel-by-barrel.

Whether enjoyed before or after a meal, Goose Island Aperitivo Stout is beautifully complex and delightfully piquant. Inspired by the bittersweet Italian liquor Amaro, we aged our decadent imperial stout in bourbon barrels for a year and then infused it with a blend of 13 different botanicals. Every sip reveals different layers of citrus zest, baking spice & lush evergreen.
8.6% - Historical Barley Wine - Goose Island has collaborated again with Beer Historian Ron Pattinson and legendary London Brewer Derek Prentice for Black Eagle: No. 1 English Barley Wine. Black Eagle is a recreation of recipes from 1666-1989. Made at Goose Island’s brewery in Chicago from a blend of two batches brewed 9 months apart. The first being a 9 month barrel aged beer and the last third a fresh batch. This gives the beer the same aged beer character in aroma and flavor, while keeping some aspects of an unaged beer.
765mL Bottle - 8.6% Golden Ale - A golden ale aged in wine barrels with Orange Muscat grape juice, Brasserie Blanc has an aroma of semi-sweet Muscat grapes and a delicate body. A touch of tartness is cut by a dry finish imparted by the yeast Brettanomyces, resulting in a flavor profile that is reminiscent of wild-fermented old-world ales.

Dried fruit aromas and vanilla and currant tones frame the flavors of Brasserie Noir. This Imperial Stout balances malty sweetness with sharp acidity imparted by a twelve month aging process in Cabernet barrels.

15.5% - Barrel Aged Wheatwine - In our new series of Barrel House releases, we aim to showcase our ability to express unique nuances from the barrels we use in the styles you’ve yet to see. These highly limited beers will only be found at the taproom in bottles. With our Small Batch 2 Year Wheatwine, expect aromas of oak, caramel, and toffee with a medium, warming body. Aged in a blend of Heaven Hill and Buffalo Trace barrels.
15% - Barrel Aged Wheatwine - With Small Batch #4 we continue to explore the unique expressions of our barrel aged wheatwine. After aging in Wild Turkey barrels for two years we let this beer rest on toasted applewood honeycombs to impart the nuanced flavors of an additional wood. This process created something truly complex yet well balanced. A slight caramel sweetness, with a lingering chocolate aroma gives way to a nutty and raisin filled wheatwine with a warming, medium-bodied mouthfeel.
13.3% - Barrel Aged Wheatwine - In our new series of Barrel House releases, we aim to showcase our ability to express unique nuances from the barrels we use in styles you’ve yet to see. Aged for 2 years in a blend of Old Fitzgerald and Buffalo Trace barrels, our next Small Batch release is a bourbon barrel aged wheatwine with the unmistakable additions of peaches and cream. A decadent bouquet of peach aroma and sweetness with layers of caramel, apricot and whiskey delivered to you with a creamy, smooth finish.

15.4% - Double Barrel Barleywine - Alongside MORE brewing, we are excited to bring to you our version of Tusk & Feather. This double barrel-aged barleywine was aged in Elijah Craig rye whiskey barrels and was finished in another set of freshly emptied Elijah Craig rye whiskey barrels. Tusk & Feather is packed with notes of charred oak and rich toffee with an herbal finish.
13.8% - BA Imperial Stout - Last year we teamed up with Phase Three Brewing to bring you If You’re a bird…I’m a Bird. We took the base non-adjuncted stout from those beers, and let them rest in Willett bourbon barrels for 18 months. The result is Wooden Wings, a gorgeous, rich, full bodied stout. Expect a massive oak presence with dark chocolate and some slight caramel.
