In the natural process, only the ripest coffee cherries are picked, and the drying process can take up to four weeks. The cherries are dried in their entirety, with the fruit still intact, on raised beds under the sun. They are turned regularly to ensure even drying, promote airflow, and prevent spoilage. After drying, the cherries are stored in conditioning bins until they are hulled right before shipment.
