Instructions

  1. Poach chicken in broth or water for about 20 minutes.
  2. Combine vinegar, juice, and mustard in a salad bowl.
  3. Gradually whisk in oil.
  4. Stir in chives and tarragon and season with salt and pepper.
  5. Cut chicken into bite-sized pieces.
  6. Add chicken and rice to dressing.
  7. Toss well.
